Fish and Chips with homemade Tartar Sauce
Ingredients:
Wild caught Cod or any white fish
1 bottle or can of beer
3 cups all-purpose flour or panko breadcrumbs
1 tablespoon paprika
Canola oil for deep frying
Salt
Pepper
Dry the fish with paper towels. Mix the flour or Panko bread crumbs with salt and pepper in a large shallow bowl. Empty the beer in another bowl.
Heat the canola oil in a heavy cast iron pan. You'll fill the pan with about a quarter inch of oil.
Wet the fish in the beer and quickly dredge it in your flour or Panko mixture shaking off the excess.
Fry until golden brown on both sides and drain on paper towels.
Homemade Tartar Sauce
Ingredients:
3 large egg yolks, at room temperature
1 - 1 1/2 cups of canola oil
3 tablespoons fresh lemon juice
1 green onion, finely chopped
2 tablespoons finely chopped parsley
1 tablespoon finely chopped fresh terragon
2 tablespoons finely chopped sweet pickle
In a food processor add the yolks and process for one minute. Add the lemon and process for another minute. Add the salt and pepper. Finally, add the oil in a slow and steady stream while the machine is on. The sauce is finished when the egg has taken in all the oil and it is thickened. Transfer mayonnaise to a bowl and fold in the rest of the ingredients. Correct seasonings an chill until ready to serve.
